Over the years, the number of local neighborhood butchers has declined dramatically. The craft of butchering a whole animal and offering fresh, quality cuts has been lost. The idea of knowing the rancher who raised the animal has been set aside in consideration of mass produced, boxed meat.
It is our mission to ensure the butchery craft is not lost due to industrialization and automation. Our craft is what feeds our families as well as yours, and we take great pride in that.
The skill, understanding, and knowledge of whole carcass cutting and value-added production has nearly been eliminated because of the fast and cheap way to process meat. Understanding muscle structures, bone conformation, and passed down techniques is vital to the future of our craft. We continue to educate our team on our process as well as our products and services.
We have developed strategic partnerships with local ranchers and farmers to continue to bring you the highest quality products. From local eggs to elk, we have worked tirelessly to research and inspect the places our products come from.
We continue to find ways to utilize every part of the animal. We believe this respects the animal as a life given to feed people and no part should be wasted. We have developed partnerships with local animal sanctuaries and the Downtown Denver Aquarium to ensure no part goes unused.
